Hi everyone, quick 1st question: What Vitamin Shoppe can I buy FungRx Medication?.

My 2nd question is: Anyone else find the Mushroom Risotto to be overwhelmingly salty? I had it for the first time tonight and it was so salty that it was practically inedible ...

I didn't care for it initially, more because I thought there was too much fennel (and I don't care for the taste of anise/licorise) but when I saute some mushrooms & onions and add a splash of white wine then stick into a portabella cap & bake - comes out pretty well the additions may have reduced the salt.

Would also work as filling for stuffed pepper.

I had it earlier this week and found it delicious rather than salty, and I've always had a very sensitive palate regarding salt. I rarely salt ANYTHING. But, wow, Graylady, that's how I'm having my next risotto!..

I do the stuff it into a portabello mushroom thing too. I saute red peppers, onions and a piece of Morningstar sausage to add to it and it is wonderful. Never noticed it being salty...

I just had my first one on Monday night myself. I added in lots of fresh mushrooms and cooked them in and thought it was divine! the onion is a fantastic idea! as is the mushroom cap. I'm adding more of this to my auto-ship for sure!..

I take the musroom risotto & put it in a FLAT-OUT tortilla with a tad bit of sour cream...YES I DRINK TONS OF HOT TEA *& WATER TRY THAT!!!..

I too, really love the risotto just the way it is, but I'm glad I happened upon this site...what good ideas. Diannek7: I'm going to try it with the tortilla tomorrow for dinner...sounds yummy. ~~Geri~~..

I have never tried the risotto, but did order some. Hope to get my shipment delivered tomorrow. And I really hope this doesn't get substituted, as I cannot wait to try Lynn's recipe...

I just happened to have made the risotto last nightmy second crack at itand I did add extra mushrooms and onions that I sauteed with seasonings that I thought would go well for my tastes. I also saved a protein serving and added a bit of chopped chicken that I threw in the pan with the mushrooms and onions. I heated the risotto in the microwave and then added it to my pan with everything else. I felt that it needed something a bit acidic added, so I put in a splash of cider vinegar. It was very good - and it didn't taste salty to me at all (and I do not care for things that taste overly salty)...

I tried this last night. Looked at the fry pan full of red peppers, onions and morningstar crumbles and thought how wonderful it would be just like that over brown rice. But I went ahead and added the risotto (determined to try everything once). I couldn't eat the portabello mushroom but the stuffing actually wasn't too bad. Next time though I'll probably just use brown rice. Thanks for the recipe...

In addition to the stir-fried onions and mushrooms, I have stuffed the whole thing into a cooked bell pepper. Yum!.

I didn't think I would like the Mush Risotto due to the bell peppers, but I love it. It's one of my favs.

If it is salty, I must like salt. But then, I've never had a sweet tooth, I crave salty chips and popcorn...
