Believe it or not these were delish!! When on the South Beach Diet we made mock french toast out of eggs and ricotta. They were so good so I've been trying for a while to figure out how to make them Medifast friendly. I finally figured it out and had them for b'fast. Soo good. Plus it's a low calorie, low carb, low fat way to change up your L&G...have it for b'fast. Plus you still have 3/4 C of veggies to eat later in the day..

1/2 C egg beaters.

3/4C shiratake noodles (I used the tofu ones).

1 tsp apple pie spice.

1 tsp vanilla ex..

1/2 tsp. walnut ex. (optional, I'm sure).

1/2 tsp baking powder.

Pinch of salt.

I put it all in my magic bullet and blended well until the noodles were creamy. I cooked them in a med-high heated skillet sprayed with Pam. They need to be spread thin but not too thin or they'd fall apart. This made about 4 good sized crepes (@8 inches). I topped with spray butter and Davinci's Spice Blend syrup. Yum!! I feel like I cheated but as far as I can tell it's allwed! I'm a happy girl this morning!..

Oh lydiaa, that sounds yummy. Would this count as the day's total lean? I've not used the egg beaters, so I'm not sure how that is figured into myMF meal plan. I can't wait to try it...

Lydiaa you rock. This sounds great. I assume you rinsed and drained and then did you nuke the noodles first? I don't have a magic bullet. Guess this would work in a regular blender???..

Defrag, I think 1/2 C of eggbeaters counts as your full lean. That's the amount they have listed under the MyPlan section anyway. Not sure why it's only 1/2 C since the cals and protein amounts are sooo low compared to other lean choices. But that's what they say!.

Bettinav, yes, I forgot to add that I rinsed the noodles very well to get rid of that smell. Very important to do! Thanks. I think a regular blender would be fine. Whatever gets them blended!!.

I wonder if we could use this recipe to come up with some type of bread pudding?? Maybe mix with an oatmeal for 2 servings??..

Actually, we can have between 1/2 cup and 1 cup of egg beaters, more if you use egg whites instead.

I'm so excited. I'm going to make this for dinner and have a tiny omelette with the other half cup of egg beaters and 3/4 cup of broccoli...

Has anyone else tried this? I'm curious ... only have one pack of noodles left, so choosing wisely...

I haven't tried these noodles yet. Is there a particular brand anyone would recommend??.

I was thinking about ordering from miraclenoodles.

Order the angel hair miracle noodles, please. Otherwise you might not be too happy, IMHO. They are the best to start with...

I made the crepes and.....not my best work. It might be because I had a lot of trouble cooking them properly but mush should have tasted the same, just not been as pretty, right? My mush did not taste very good.....

That's weird, mine came out so good. Maybe it really does have something to do with cooking them properly? I put just a little in the pan and swirled it around until it was really thin then cooked them for a long time. You have to cook them longer than regular pancakes or crepes to get all the moisture out. It could just take some practice, though. I remember now when I was making the ricotta crepes the first few didn't come out so pretty. Try again, they really are sooo good and worth it!..
