Medifast recipe for Shepherd's Pie?

I searched the forums and didn't see a recipe for this so I came up with my own. I was watching Paula Dean on the food network the other day and she made a shephers pie with the potatoes on the bottom and a buiscuit crust on top. I started thinking what I could do to mimick that and I came up with this. It was a winner...even with the bf!.

3/4 C leftover mashed cauliflower (like the faux mashed potato's).

4 oz very lean ground beef (makes 3oz cooked).

1 tsp chopped garlic.

1/4 C diced onions.

1/4 C diced red peppers.

1/2 C mushrooms (makes 1/4 C cooked).

1/4 C lf cheddar cheese.

1 T finely grated parmesan cheese.

1 packet Medifast crackers, finely crushed.

Spray an individual casserole dish with Pam. Line with the mashed cauliflower. Sautee the beef, onions, and garlic. Layer over the cauliflower. Sautee the peppers and onions. Layer over the beef mixture.

Now mix the crushed crackers and parmesan cheese together. Sprinkle over the dish. Pat down with your hand to compress them a little bit. Bake at 350 for about 20-25 min. Enjoy!..

Oops! Forgot to say to add 1/2 T melted Smart Balance to the cracker cheese mix! It makes a nice crispy crust on top...

Hey Lydiaa you babe Happy Sunday. I make this all the time with turkey breast. I do what Judy suggested and make it Mexican with the flavors in the turkey. Then I actually put the cauliflower on top of the meat, which I put in the bottom of sprayed casserole. Either way Ms. Chef, this is great stuff. I eat soooo much cauliflower...

Judy has a mexican shepherds pie?? How did I miss that? Can someone please either bump it or post a link, pretty please with some sf Torani Black Cherry syrup on top???.

Putting the meat on the bottom is how my Mom always made it. It was interesting to see Paula Dean's recipe though. It just intrigued me that it was sort of upside down shepherds pie, lol...

Lydiaa Yes Judy mentioned two things I think in a cauliflower thread...Twice baked potatoes and shepard's pie with mashed cauliflower. Don't know if I can find the original thread. It was definitely under cauliflower though...
