I'm having company next week to celebrate a vegan friend's birthday and I have a good appetizer and entree, but I need a good dessert recipe that everyone can have..

Any ideas?..

Are they vegans or just vegetarians? Vegans do not eat anything animal based, so anything with milk or butter (creme) would definitely be out. Now vegetarians are ok eggs and other dairy.....

Easy Apple Pie Wontons.

(serves 2-3 as a snack or dessert).

1 small apple.

12 gyoza or wonton wrappers.

Cinnamon and sugar.

Preheat the oven (I used a toaster oven) to 400 F and spray a cookie sheet lightly with canola oil..

Peel and core the apple and cut it into wedges about 1/4 to 1/2 inch thick. You will want them to be as thick as possible while still allowing you to seal the wonton around them, so cut one or two and try them first..

Place an apple slice on a wrapper with the straighter edge along the center line. (If youre using square wrappers, lay the apple diagonally.) Sprinkle the apple with as much cinnamon and sugar as you like, taking care not to get it on the edges of the wrapper..

Moisten the edges of the wrapper with water.Fold the wrapper over the apple slice, and pinch it to seal. This works best if you hold the wonton with one hand while you pinch it closed with the other. (If youre using square wrappers, you should be left with a triangle.).

Place the filled wontons on the baking sheet, spray them lightly with canola oil, and bake for 10 minutes. Turn them over and bake for another 10 minutes, or until lightly browned on both sides. Remove them to a wire rack to cool..

Serve sprinkled with cinnamon and sugar or serve with Peach Chutney to dip..

Quick Peach Chutney.

1 peach, peeled and finely diced.

2 tbsp. apple juice or other fruit juice.

1 tbsp. raisins.

1 tbsp. agave nectar or sugar.

Scant pinch of ground cloves.

1/2 tsp. apple cider vinegar.

I did this in the microwave, but you can easily do it on the stove. Just allow a little more cooking time..

Place the peach, juice, raisins, and agave nectar in a small microwavable bowl, and cook on high power for one minute. Stir and cook for another minute, or until the peaches start to break down and the raisins grow plump. (If it starts to seem dry, add a little more juice, but this should be a very thick mixture.) Break the raisins up slightly using the edge of a spoon to release their sweetness into the chutney. Stir in the cloves and vinegar, and cook for one more minute..

Simple, but delicious! The peach chutney brought back memories of my mothers pickled peachessweet and sour peaches with a hint of cloves. If you have chutney left over, spread it over some freshly baked whole grain bread for a real treat..

And the next time I play with gyozas, Im going to fill them with peach chutney!.



Pineapple Coffee Cake.

Dry Ingredients:.

1 cup quick or whole oats (not instant).

1 cup whole wheat flour.

1/2 cup vegan sugar (I used demerara).

2 teaspoons baking powder.

1 1/2 teaspoons Ener-G Egg Replacer.

1/2 teaspoon ground cinnamon.

1/2 teaspoon baking soda.

1/2 teaspoon salt.

Wet Ingredients:.

3 tablespoons water.

1 tablespoon white or cider vinegar.

1 cup crushed pineapple packed in pineapple juice, undrained.

1/3 cup unsweetened applesauce.

Topping:.

2 tablespoons coarse sugar, such as demerara or raw sugar.

1/2 teaspoon cinnamon.

Preheat the oven to 350 F. Lightly spray or wipe the bottom and sides of a 8 X 8-inch glass baking pan with oil or cooking spray. (You may use metal, but the baking time will vary.).

Put the oats into a blender and grind until they are fine. Stir a couple of times to make sure that they're uniformly ground..

Mix the oat flour with the other dry ingredients. Add the wet ingredients and stir until moistened and completely combined, but don't over-mix. Pour into the prepared pan (batter will be thick). Mix together the sugar and cinnamon topping, and sprinkle it over the top..

Bake for 30-40 minutes, until a toothpick inserted in the middle comes out clean. Allow to cool for at least 15 minutes. Eat and celebrate!.

Makes about 9 pieces. Each piece contains: 155 Calories (kcal); 1 g Total Fat; (4% calories from fat); 3 g Protein; 36 g Carbohydrate; 0 mg Cholesterol; 299 mg Sodium; 3 g Fiber..

It didn't post the stats for the Apple Wontons, but it doesn't seem like it would be that bad since it pretty much just fruit & wonton wrappers. That site has a bunch fat free vegan desserts. A lot of them are lacking on protein for Nutrisystem though...

Thanks so much. I think the apple wontons look great- I get extra carbs so I could just do it as a carb and a fruit and still have my Nutrisystem dessert later..

There is an author with a great blog called VeganYumYum. She has many recipes. Also, the Whole Foods website has great vegan recipes...

This isn't really a recipe, but parve ice cream is always a good choice. It's not super easy to find, but you could probably call around. If you have any "old world" markets they're bound to have a stock of it. You could serve it with a nice bit of parve cake, which while not super Nutrisystem friendly would be fairly low in fat as there's (generally) no eggs or milk or butter etc...

I have several recipes for vegan cakes and such but if you want something quick you could make this chocolate fondue:.

12 oz semi sweet chocolate chips.

2/3 cup coconut cream.

2 tsp vanilla extract.

You could also add 1 tsp instant coffee.

This is not nutrisystem friendly but your vegan friend should love it...

I'm hoping to have something we can both eat, though. Are any of your cakes Nutrisystem friendly? I have protein powder to add if the protein would normally be too low...
