The more I thought about the scrambled eggs, the more I thought about how much better the muffins could be if they were a little lighter. And eggs make baked goods light don't they??.

When they come out with the eggs, I am going to take the Cowgirl Starter Muffin recipe (which is the one I always use) and substitute eggs for the shake and see what happens. Hopefully, they will be lighter and less sweet..

What do you bakers think??..

I don't know if powdered eggs would work the same. You could use an eggwhite and whip it up good then fold it into the batter. An egg white would take a very little bit off of your lean for the day. In fact, I may try that with a shake cookie today!! Thanks for the inspiration!..

First I think we have to wait and see what the new product is!.

I have played around with the muffin recipes adding either 1 TBS or 2 TBS of egg that I saved from when I had an omelet L&G that day. I've tried various muffin recipes with various oatmeals & shake/chai/capp or hot chocolate drinks. I tried the muffin recipe with no shake. I tried the muffins that have soda & vinegar in them (DDancer's). I even tried using flax seed meal (which it says can be used as an egg substitute in baking) and they still come out like hockey pucks. Tasty hockey pucks but still no rise to them.



So, I save all my egg to eat as eggs and sometimes use the flax seed meal because it is so good for you and just enjoy the muffins for what they area portable, convenient alternative to liquids!..

Gosh, we have all tried everything to keep them from being what they are: little convenient hockey pucks. :-).

I am going to give it try anyway. What they hey, it will be an additional to the mix that is not sweet and I don't even add Splenda to them since they seem so sweet to me..

I will keep you all posted...

Since I can't eat the bars, most of my Medifast meals as 90-110 calories each. The extra calories I get from the occasional 1 tbsp. of peanut butter does not put me over the 1000 calorie mark. Also, I've always been a BIG peanut butter eater and getting an taste of it every now and then, helps me to get by. So far, at least, I've not gone hog-wild on the stuff.

Some of the choices they give for snacks will never make it into my pantry/refrigerator..

And the only free food is olives?!?!?! Yuck!.

You would think that celery would be free. Then I could put p.b. on the celery sticks......

Jim, the only thing I have seen at all about the eggs is that post from Nutrition stating that we could order December 18th. Got any ideas what you will do with them? Keep it CLEAN..

Scroll up darling. I just made them. I added some Davinci Praline syrup to it and the batter was so awesome it almost didn't make it to the oven. Yummie...

I did my own version of the Shake-n-Bake cookies.

2 pkts vanilla shake.

1 pkt chai tea (I can't stand to drink it way to strong).

1/2 cup water.

1/2 tsp baking powder.

1 tsp vanilla extract.

1 tsp stevia power.

I baked for 15 minutes @ 350 they came out flat and soft and taste yummy!!.

I used a regular size spoon and dropped them on the sheet I ended up with 15 cookies, I borrowed someone's suggestion from a mffin recipe and used my finger dipped in water to smooth the tops out, since this was my first attempt at cookies I wasn't sure what they'd do but the spread out fairly flat Necia has a friend over and she thought I was making sugar cookies..
