Hi Everyone,.

Just wanted to get an opinion if this was OP or not.

1cup of egg beaters.

1/2 cup diced tomatos.

1 cup spinach.

2oz of 96% lean ground beef.

1oz FF Kraft Cheddar Cheese.

I poured the egg into a small oven dish, then added meat tomatos and spinach, then put the cheese on top and baked in the oven.

Does this sound OP?..

That looks like it would work, to me! Also sounds pretty yummy.

That might be a smidge too much lean, also you might need to add a fat since the FF cheese and Egg Beaters would count as 'leanest' type protein, I think. 96% lean beef is a lean portion (no fat servings with that) so maybe you'd be entitled to like... 1/2 a fat serving.

A strict purist might break that recipe down more but I'd give it a pass...

Thank you! It was pretty yummy but just confused on using the beef and Egg Beaters, I guess I could try the 99% FF Ground Turkey and add a Healthy Fat. I'll have to work on it more...

I grabbed my QuickStart guide and all the notes I've added from stalking the Nutritional Support forum. Veggies are all set, except that you probably measured them raw(?) and the spinach, at least would cook down a lot. Maybe you pre-cooked it? I do, just to make sure I don't short myself. 1 C. eggbeaters is 1/2 Lean. 2 oz of ground meat that is up to 98% lean is 1 ounce short of 1/2 a Lean.

Of the specific FF cheddar she had as an additional ounce of protein, so sounds like you'd be fine for the protein, if the nutritional data for your cheese is similar..

As for HF, the eggbeaters would need 1, the beef would need none, and I would be inclined to just ignore the oz. of cheese. Nutrisystem is really good about analyzing and tweaking our recipes, if you want to post it over there. Anyway, that's just my take on it, and it sounds delicious!..

Abbey do you have a scale that you use? I think you are shorting yourself on the green. Spinach is like lettuce. It takes a ton to make a full serving. Also be careful of FF cheese. Sometimes when they take out the fat, they add carbs. Otherwise it looks really close.

I think they would have you add a little more beef and suggest you add some veggies to get all your green...

Sounds delish. One of the fast food places used to have a low-carb breakfast bowl that was similar to this. I ran out and bought tomatoes today and am going to make it for my L&G tomorrow with lean ground turkey and the southwestern eggbeaters. Did you precook the meat?..

I did precook the meat and spinach before adding them into the egg beater. I did not cook the tomatos before hand. I was wondering too if instead of FF cheese maybe using reduced fat. I cooked at 350 for about 30 minutes or until golden brown. The chees was put on top. Thanks again all!.
