Medifast recipe for muffins?

Just made a couple of muffins. I was really leery to try. Searched all over for True Lemon and didn't find it, so I got some Crystal Light lemonade powder. Here's what I did for the first muffin:.

Pkg Medifast peach oatmeal.

1/8 tsp baking powder.

1/4 tsp baking soda.

1 serving Crystal Light lemon - it was way too much, but edible. Wait, the second recipe is better....

Mix together all dry ingredients..

Spray a pyrex custard cup with Pam, I used the smaller ones..

In separate cup, about a scant 1/4 cup water, with a teaspoon of white vinegar mixed in. Mix wet ingredients into dry, it bubbles up immediately, only mix till all ingredients are wet, and add a little more water if you need to. Do this quickly, you don't want to mix down the bubbles. Spoon into your prepared custard dish, and put in 375 degree oven (preheated) for about 10 minutes. It won't get real brown on top, but you'll be able to tell that it's done. Not mushy or anything.

Maybe half the Crystal Light would have been better. Since I had the oven hot, I decided to try again, with a slightly different twist (this one is for tomorrow morning)..

1 pkg Medifast Blueberry oatmeal.

1/8th tsp baking powder.

1/4 tsp baking soda.

Mix together dry ingredients.

In separate cup, scant 1/4 cup of water, a good squirt of lemon juice (in the plastic lemon thingy), and a tsp of white vinegar (note, someone, might have been Hey Loosie, said the lemon juice wouldn't work, so I didn't know what to expect).

Mix with dry ingredients, it bubbled up just like the last batch and I dumped it in the prepared custard cup and baked it. I took a nibble after it was done. I think I like it a lot! You should add some sweetener if you like a real sweet muffin, I like them less sweet. It's going in the fridge for tomorrow when I'm running late for Monday morning meeting..

The main thing is, it was very airy and very muffin-like. I think I can work with this recipe!!..

So, this makes one LARGE muffin, correct?.

I usually use the True Lemon. You couldn't find it anywhere?.

OOOhhh PEACH, that sounds so good, and I have a couple boxes in the back of the cabinet. It hasn't been my fav as oatmeal, but I think as a muffin it will be awesome. Thanks for the idea!..

It is one large muffin, one Medifast meal.

Yeah, I couldn't find that True Lemon, I'll hunt some more before I order online. But darn it, I forgot one thing on my second recipe, I just got some flax seed from GNC and I used two teaspoons, ground up in my Magic Bullet along with the other dry ingredients.

And has this ever happened to you? My DH ATE a third of my blueberry muffin while I was in the shower!!!! He told me it was good, and I shouldn't have left it sitting on the counter if I didn't want him to be tempted by it. It would be funny if that weren't my breakfast tomorrow!! He is not on Medifast and does not have a weight problem, and can eat any darn thing he wants! He was lucky his mom was here when I found out...

Ladies,.

If you are looking for True Lemon, I buy it at Discountcoffee.com. They have good prices and are very easy to deal with. And have other things like sweeteners, crystal lite packs, etc. I live on True Lemon. And they have the shakers, as well as the little packets, which I could not find anywhere else. My local Ralph's sells the packets.

It's great too...

I found True Lemon and True Lime at the WalMart SuperCenter in the same section as Splendra and Equal - on the tip top shelf where people who are 5'2" don't usually look!!.

The other treasure I found there - also on a top shelf - was the DaVinci Sugar Free Syrups in the coffee aisle!..

I found True lemon at Meijer's in the section with the crystal light powder drinks, way up in a corner. I almost missed it, in fact I really wasn't looking for that but came across it by accident while looking for rasberry tea. They seem to like to hide the stuff!..

I can't wait to try the blueberry....... all these recipes are sooo wonderful.... sort of makes me anxious for some reason.... guess I want them all.....
