Hi, I hope the following was on plan because it was soooo good. I browned some hamburger meat with just a little onion, garlic, cumin powder, and some chipolte seasoning (at Sam's -tone seasonings). In another skillet, I browned some zuchinni and maybe 1/2 cup of canned tomatoes until done. I then added all of this to some Medifast chili that I prepared on the stove and let cook for a couple of minutes. When it was done, I threw it in a bowl and topped it with 1 oz of lowfat chedder cheese and melted it all in the microwave.

If I measured it correctly, I think it came to:.

1 Medifast meal.

5 oz protein (including the cheese and meat.

1 cup of cooked veggies. ( I probably could have added more)..

Here's my Chicken Tortilla-less Soup that we use for our L&G when craving Mexican Food:.

Chicken Tortilla-less Soup..

4 TBSP. Chopped Green Chilies (Old El Paso ).

3 slices onion, chopped.

1 tsp. garlic (minced).

12 oz. cooked chicken breast (diced).

Cup zucchini.

2 cups low salt, low fat chicken broth.

1 cup canned low salt diced tomatoes (watch nutritional count and aim for no more than 8 carbs for the cup).

Tsp. cumin.

Tsp. black pepper.

Spray a pan with PAM and saut the onion, green chilies, and garlic. Add the 2 cups of chicken broth, 1 cup water, and remaining ingredients. Simmer for 45 minutes to 3 hours whatever time frame you operate in! Add water as needed.

When ready to serve, if you can afford the calories and you have limited your chicken to the appropriate serving, sprinkle 1 oz. of shredded low-fat cheddar cheese over the top. Makes 2 medifast servings..

The tortilla soup sounds great! Someone else posted a recipe for a chile relleno a while back that I might also try. Mexican food is my big weakness and played a huge hand in my weight gain...

I understand about craving Mexican Food!.

I've been on since August (lost 70 pounds so far) and had to come up with some Mexican food that fit the program ... In addition to the Tortilla-less Soup, I also do a lot of taco salad with either ground beef seasoned or chicken breast strips seasoned. I brown the meat, season with a taco seasoning (read the back of the pkg. and get the lowest carb), then serve the meat over a combination of lettuce, tomato, onion, green peppers, etc. salad. I either use salsa (get a type that isn't cooked - that way it counts as a veggie) or with Kraft Light Done Right Three Cheese Salad Dressing.

OR - I stir fry diced chicken breast, peppers and onions and summer squash and tomato - season with fajita seasoning, top with cheese....

It's not fajitas, but it's as close enough!.

We eat out at a Mexican restaurant every two weeks or so. If we are at a traditional one, I order fajitas with peppers and onions and a side salad instead of the set-up (the tortillas, cheese, guacamole (sob!) etc.).

When the chips and salsa come, I ask for my own bowl of salsa... here's where I get tacky and can only do this when I'm with loved ones.... I take ONE chip, and use it to transport the salsa to my mouth. I will double dip, triple dip, quadruple dip, and so forth tasting a bit of salsa but no chip each time. As long as it's a fresh veggie salsa (not cooked or processed, etc.) I figure it's the same as the 1/2 cup raw veggies we're allowed on top of our salad. So far I haven't eaten the chip....

If we go to a place like Qdoba (a build your own burrito bar), I get a "naked burrito" (meaning it comes in a bowl instead of a tortilla) with double chicken (grilled chicken that I've actually taken home and weighed to make sure I was getting the right amount), grilled and/or fajita vegetables (it's zucchini, summer squash, peppers, and onions) and top with lettuce and pico de galo..

Medifast legal and wonderful!.

We only eat at restaurant who publish their nutrition information on the web so I can research calories and carbs before we go!.

LOVE MEXICAN!!!! I was desperate this week so I combined someones shredded chiken breast in rotel idea with whipped cauliiflower and a pinch of cheese. Delicious! My daughter ate my other portion (stinker). I did add some cumin to the chicken while crock potting it and some left over taco seasoning to the cauliflower....

I'll have to try your recipe this week.. Once on a Mexican food roll... I could eat it every other day..
