I marinate them in various low carb salad drssings like balsamic vinaigrette, newman's lite un dried tomato, or enchilada sauce then grill them...you can grill them in a skillet on the stove...theyre done when they turn white, cut them in the middle before taking them off the burneer, the inside should be all white, no pink left...you should also consider buying a george foreman grill I have one it's awesome you can cook 2-4 breasts in like 4-7 minutes..
To bake plain boneless, skinless chicken breasts, just pop them in a 350 degree oven for about 20-25 minutes. You dont need to cover them with broth unless you want to. You can bake them uncovered, but I find this dries them out. To retain the juices better, I wrap and seal them in foil (or put them in a covered dish), then bake same as above. I like to season them with seasoning salt and spices first or marinate overnight..

If I bake chicken, I make a foil pouch and salt and pepper them or throw whatever spices that are within my reach and match my mood. If I'm feeling like I need something extra, I'll take a very thin slice of lemon and put it on top of the breast. Occasionally i'll add a little of my italian dressing, but I made it without the dressing and I couldn't tell the difference. The very thin slice of lemon gives it a lot of flavor and it's really good, not to mention it looks nice right out of the pouch. We're allowed 4tbs of lemon juice, so I'm pretty sure it's a safe bet..
I do two boneless breasts at 350 for about 40 minutes and let them sit in the foil for 5-10 minutes after and they're always very very moist, but they shrink up a good bit. For breasts with the bone, I have no idea because I've always sliced the rib cage off...

Super simple recipe for chicken breasts:.
Rinse each breast and place in a glass roasting dish. Sprinkle with paprika, to taste. Spray each breast with 5 sprays of I Can't Believe it's Not Butter spray. Place in pre-heated 350F oven for 40-50 minutes, or until juices run clear (depends on size of the breasts). Baste, periodically, while cooking. Very good!..
To simply bake boned chicken breast I place them in a baking pan, add about a half-inch of water, cover with foil and bake for about 1.5 hours. The chicken falls off the bone when done. Of course, a variety of spices can be used if desired, but for a plain cooked chicken this works great...
