I love the chicken broccoli and rice casserole so I come up with a Medifast friendly version. I used a cream of broccoli soup, a chicken bouillon, cooked chicken and some broccoli, cooked it together. For the rice I used cauliflower. I chopped it to about the size of rice and then I steamed it in a bowl with a lid, in the microwave, without water. I mixed it all together and baked it for a few minutes. It is similar to the real thing.

I don't have exact measurements on the water. I never measure I just add until it looks right, sorry. I used 1 cup of cauliflower and 1/2 cup of broccoli and 7 oz of chicken. This counts for a snack (bouillon), a l & g and a soup, so try not to eat it all at once. I guess you could use 6 oz of chicken and 1 oz of ff cheese, that would be good too..

Great idea!!!! I hope those struggling with the taste of some of Medifast meals read all of these great ideas. I can't even begin to count the numbers of great ideas recipes etc I have gotten off of here!!!..

Can't wait to try this...I made cauliflower mashed potatoes with fat free cheese and I can't believe it's not butter was totally yummy. I want to see how close I can make that.

Cauliflower look like rice!!!..
