Okay I am going to put you great cooks to the test. I was thinking today how good it would be to make a stuffed pepper with those funky noodles everyone has been raving about. Not sure how to go about it though becasue I am not too familiar with them. I challenge inventive talented people to come up with a recipe for a stuffed pepper for a lean and green meal..

Who is up for the challenge? We could have a contest and rate the best recipe. I wonder if Medifast would be willing to support this. You've heard of the Iron Chef? Well we could do one like Iron Medifast or some quirky title..

Serious though, can any of you awesome creative cooks help me on this one. I love stuffed peppers, but the rice is a no no...

Well, I don't like peppers but I made stuffed squash (kusa) this way. I wasn't a big fan but my cousin has been on Atkins for years and this is what she uses.

Mix ground beef or lamb or TVP with chopped cauliflower and add a generous sprinkle of salt, allspice, and cinnamon. Fill your casserole dish a little less than half with crushed tomatoes and then fill til the dish is half full with water. stir it and sprinkle salt on top. stuff your peppers and then lay them in the tomato (the tops of the peppers should be above the tomato, just dump out some tomato if you need to) and then bake in the oven. If you do squash, you can make it on the stove...but, not sure how to do it on the stove with the peppers since you need a casserole dish rather than a pot...

I read someone else's recipe where she put the noodles in her Magic Bullet... I just cut the noodles into really small pieces. I mixed with ground turkey and some kind of veggies, probably onions and muchrooms. And stuffed the peppers and broiled for a few minutes. Nothing fancy, but it was a nice change of pace...

I think the cauliflower would probably taste better than the noodles in this case. This gives me a good idea for a recipe to try tonight! Thanks!..

OrangeBlood inspired me : Shiratki Stuffed Peppers [Poor] [Poor] [Fair] [Fair] [Average] [Average] [Good] [Good] [Excellent] [Excellent].

After reading OrangeBlood's recipe of using Shirratki as rice..I decided to.

Make those stuffed peppers I was longing for. These are fabulous!!!!.

8 oz lean ground beef , browned, rinsed and drained.

1 can diced tomatoes with basil and garlic.

1 package shiratki noodles diced up fine( I put in the magic bullet for a few seconds) ends up looking like rice.

3 large diced scallions.

1 4oz can muchrooms, drained and diced finely.

3 TBS Italian seasoning.

2 TBS garlic powder.

Saute everything together about 10 minutes over medium heat.

Fill 3 hollowed out medium bell peppers.

Microwave on high for 5 minutes.

Slice 1 laughing cow light cheese wedge into 3rds and put on the top of the.

Peppers and microwave 1 minute more..
