I order 4 boxes of oatmeal just for the muffins and don't really like them I can eat them but don't like it. When I made the oatmeal, I stand putting this in my mouth at all. seems like the muffins needed more vanilla flavor or something and spenda didn't make it better either. I'm thinking I just need to make it and deal with it since it's only 4 boxes and eat'em in the morning but they are filling...

The ingredients I used.

Vanilla extract.

2 tsp of egg whites.

1/4 baking power.

Spinkled cinnamon.

Mixed all dry ingredients together.

1/3 cup of water.

And I can't get it ot taste right..

Taste is such a personal thing, it's difficult to know what to suggest, apart from if you think it needs a little something, try it!!.

By playing around I have found my to die for recipe, only to be eaten once a week, Sunday breakfast if I've had a good weigh in..

1 pack oatmeal.

1 tbs ground flax seed.

1/2 tsp baking powder.

1 tsp dark cocoa powder.

A splash of egg whites.

Enough water to make a dropping consistency batter..

1 tbs peanut butter.

Mix the oatmeal and flax, then sieve the cocoa and baking powder, add to dry mix, mix well. Add the wet ingredients and mix well..

Put half the mix in a PAM sprayed bowl, add dollop of peanut butter, cover with rest of muffin mix..

Nuke in micro for 2 mins, turn out onto a plate, nuke 30 seconds more..

Take the phone off of the hook, send the family out on a long walk, lock the gates to your yard..

Sit and enjoy for as long as humanely possible...

I made pumpkin spice muffins, a receipe that I got off the boards a few years ago, I love them to this day!.

1-apple cinnamon oatmeal.

1-Chai Latte.

1/2 tsp baking powder.

2 tsp Splenda (optional) I dont use this.

1/2 tsp pumpkin pie spice.

Mix the dry ingredients and then add.

1/2 tsp vanilla extract.

1/2 tsp almond extract (optional) I dont use this.

1/2 cup water.

Bake at 350 for 20-25 minutes and cool..

Makes 6 muffins (3 muffins for a Medifast meal).

I try not to use my condiements all in this receipe and I found it tastes great and it is very filling. I use mini muffin pans and so I get 6 muffins per meal...

Here's a banana muffin recipe I always use. it makes 12 muffins, 1 is equal to 1 meal..

6 pkts Medifast maple oatmeal.

3 pkts Medifast banana pudding.

3 pkts Medifast eggs.

1 tbsp baking powder.

10 pkts splenda.

3 cups water.

1 tsp vanilla.

Put oatmeal in food processor or blender to get it down close to a flour consistency..

Mix all dry ingredients in a bowl..

Add water and vanilla, then mix.

Spray muffin pan with pam..

Pour batter into 12 muffin cups or pan.

Bake at 375 deg for 15-17 minutes.


I don't always process the oatmeal, but it's better if you do. these also freeze very well...

I am so sorry you don't like muffins. I love them..

Just some thoughts. I like the peach oatmeal just plain muffins.

But for the Maple and brown suger, you can add the flavor drops, etc. Plus, sometimes, I make mine with my cinnamon herbal tea instead of water. Sometimes I sprinkle a touch of sugar free lemonade on the batter and they come out lemon flavored and yummy.

I think it tastes better with egg substitute instead of Medifast eggs. Also, I have been adding 1 tblsp flax seeds and then mixing the dry (oatmeal, flax, baking soda and baking powder) in my personal blender to grind. I always grind it up before adding liquids anyway as it makes it more like "flour"..

I did have to play with the amount of liquids as it came out too dry and dusty. I added more to the recipe to get it moist enough. I like it more cake-like. Then, I add a little more water when using flax as it seems to absorp more..

Then, sometimes Ii use ICBINB or powdered peanut butter for a topping. Strangely, the LF Laughing Cow Garlic or Onion are good on the lemon muffins. A tablespoon or 2 of plain yogurt flavored with Crystal Light or SF lemonade is a tasty "frosting"..

I played with the time for my microwave and the kinds of bowls. But I discovered I can cook it in anything for 1:30 min and it comes out good..

I don't think I could have made it this far on Medifast without something like these muffins, soup bread, etc!.

If nothing works, I have heard several times that if you really don't like them, Medifast will take them back and trade for something else..
