Hi everyone. I would like some help please..

I have been learning the Nutrisystem plan for two and a half months now and have lost 23 lbs. I am alone most the time except on weekends, husband travels during the week, so I don't really have to cook for anyone else and it's not been difficult to stay on plan other than getting discouraged about the plateau of the past three weeks.

This evening I had a fun call from my son who is away at university. I haven't seen him since Christmas and he is coming home in ten days for a four day weekend and bringing the young lady he's been dating. I'm a little excited and a little nervous!.

I want to cook his favorites, but I also want to stay on plan so there are some favorites he's not getting; chicken fried steak and fried chicken, for example. Also I would rather avoid having a separate dinner than everyone else.

I was thinking of.

Friday: Spaghetti meat sauce and pasta with salad and garlic bread on the side. I'd pass on the pasta and bread of course and have my sauce on sauted summer veggies with italian seasoning. When he was growing up I usually made the sauce homemade. Is there a Nutrisystem family friendly recipe someone can share or is there a sauce in a bottle that is Nutrisystem friendly?.

Saturday: It's tradition for his dad to cook burgers on the grill and homemade french fries on Saturday so I can't change this, but I can of course have my Nutrisystem burger and try to skip the fries. Any suggestions for salty crunchy something I can make instead of fries maybe?.

Sunday: A roasted rosemary chicken and veggies with salad and whole wheat rolls will be Nutrisystem friendly, won't it? I just have to skip the dessert he calls mud pie. I don't remember the real name of it because he started calling it that when he was learning to talk, but it has chocolate pudding, cool whip, powdered sugar and cream cheese on a butter, flour and pecan crust and topped with more cool whip and shaved chocolate. Definately not Nutrisystem friendly, but he asked specifically for it, so I'll be making it and trying to skip it..

Monday: He loves chicken enchilada casserole but it is another definately not Nutrisystem friendly recipe. (Loads of two kinds of cheese, campbells cream soup, and corn tortillas and topped with Frenches fried onions.) Does anyone have a family size Nutrisystem friendly chicken enchilada-ish type recipe?.

I would sure appreciate your help with recipes or suggestions. Thanks in advance...

Ann, everything sounds delicious! I'm sure they can be made Nutrisystem friendly. Find a recipe by Christina Gray and click on her link at the bottom. I'm sure she has a ton of ideas on her page.

Graylady is another that has a link to awesome recipes!.

I'm not creative so I count on them for great ideas and recipes...

On Friday I'd use a whole grain pasta and measure my portion size so that I could enjoy the meal with my family. I'd definitely still toss in some veggies simply because it sounds yummy. There is no reason why they can't eat whole grain pasta. I'd definitely agree though that you should skip the garlic bread..

On Saturday I'd have my husband make patties from low fat beef (or my preference is ground turkey breast) and measure out one 3 to 4 oz patty just for me. This way you can enjoy this meal with your family as well.

What about some zucchini fries for the crunchy salty option? I believe a very light dusting with flour and egg beaters and a quick toss in a fry pan (maybe with a little pam) or baked in the oven could satisfy that option..

The rosemary chicken on Sunday can be Nutrisystem friendly if you remove the skin and stick with the white meat. Try not to add any unnecessary fats while cooking it either..

I don't think I can help you out with Monday. I can't think of a healthy way to make enchiladas. I do a healthy taco every Monday at home using 99% FF ground turkey breast, low sodium taco seasoning, whole grain taco shells, LF mexican cheese, and FF sour cream..

Found this doing an Advanced Search.. I have seen several others.. Check under Food Talk & Tips.. search.

Chicken Quesadillas.

1 Nutrisystem Chicken Breast Patty, sliced.

1 1/2 slices fat free cheddar cheese slices.

1 Tbs. fat free sour cream.

1 Tbs. salsa.

4 squirts ICBINB spray.

Pam.

2 whole wheat tortillas (La Tortilla Factory's are 50 cal each).

Heat medium skillet and coat evenly w/ Pam cooking spray. Heat Nutrisystem chicken breast in microwave for 1 min. Take 1 of the tortillas and spray 2 squirts of ICBINB on one side. Place in skillet w/ ICBINB side down. Flip after 2-3 min. Break up cheese evenly over tortilla in skillet.

Top w/ chicken. Remove from skillet. Take 2nd tortilla and again spray one side w/ 2 squirts of ICBINB spray. Place in skillet w/ ICBINB side down. Flip after 2-3 min.

Cut into 4 triangles. Mix sour cream and salsa in a small bowl. Use as dip for quesadilla...

This recipe sounds great. I intend to try it with the family. I also would like to avoid eating my Nutrisystem meal alone and everyone else eating something else...

Thanks everyone. I like the idea of the quesadillas. I had been planning to make black bean quesadillas for a lunch one day. I may have to switch things up a bit...
