So this is kind of old news...but I just pulled this off of the South Beach Diet site. Obviously measure the cauliflower after cooking so that it is appropriate for LG. I don't always post measurements or amounts with recipes so thought this would help. Also, add some garlic, horseradish, chipotle, etc. for flavor. Happy Holidays..


2 cups cauliflower florets.

1/2 ounce butter-flavored spray.

1/2 ounce fat-free half-and-half.

Pinch salt.

Pinch freshly ground black pepper.


Steam or microwave the cauliflower until soft. Puree in a food processor, adding the butter spray and the half-and-half to taste. Season with salt and pepper.

Nutritional Information:.

81 calories.

6 g total fat (2 g sat).

4 mg cholesterol.

5 g carbohydrate.

2 g protein.

3 g fiber.

82 mg sodium..

I am making this for my Thanksgiving dinner..

I also put it in a baking dish and put in the oven until the top is brown. Very yummy!..

I tried that recipe and thought that much butter spray gave it a funny taste. I think I would go with chicken broth instead...

When you make this what do you add it too when loggin your meal teh green?.

And also how big is teh serving size your using is it teh whloe 2 cups? because I thought we coudl onlky have 1.5 cups of cooked veggies?..

Lisa Ann, you could probably cook the two cups or so and see how much it measures out to after you cook it, which is when you should measure. It will cook down some. So just cook it and measure and then log it in your L&G under veggies - cauliflower. Enjoy...

Reading this thread, I just had an "OH YEAH!" moment. One of my annual contributions to Thanksgiving Dinner is my "famous" Millionaire Potatoes. It's made by cooking/mashing potatoes, then adding Ranch dressing to taste, shredded cheddar cheese, bacon bits and chives - basically a baked potatoe in a bowl. The ranch dressing makes it delish! Why couldn't we do the same thing with mashed cauliflower? Never thought of it!!..

Oh my Millionaire Potatoes...If you can come up with a Medifast friendly way to make that recipe? Yummmmm.....

I'm going to try it with mashed cauliflower, but I don't know if bacon bits are allowed. I'll have to find that out. Someone else has asked, so we'll see what the answer to that is...

I don't know about the bacon bits. But aren't they made of soy? Some version? But if you can chef this up you are my hero......

I think turnips are closesr to potatoes than cauliflower. The turnips get so creamy when pureed. this would work well with the turnips too...
