Well, I bought the shiratake noodles, some low carb spagetti sauce and cooked up some lean ground beef. Sprinkled a ittle parmasean on top and oh boy, was it good! I felt like I was cheating, but I WASN'T!!.

I bought some fettucine shiratake noodles also. Any ideas on a cream sauce or other serving suggestions for these?..

I agree those noodles really hit the spot on certain days. The first time I had them I also made a spaghetti and was in heaven! There are all sorts of good recipes with them if you search the Medifast recipe threads...

Maybe a wedge of laughing cow lite (1 wedge = 1 lean) and a little FF Half and half would work with the fettucini...

Try the Pad Thai recipe on here...it's fantastic! Check out this website www.konjacfoods.com and look for the recipes for their noodles...they have a ton!.

Pad Thai.

YUM!!!! It worked!!! This sounds way more complicated than it is, but here's the recipe. It was fantastic! It has a very authentic Thai taste.

It was also my first time trying the shiritaki noodles, I don't know why I was so afraid of them! The texture is perfect for this dish..

I modified this recipe from a cookbook I bought in Bankok many years ago (my mom used to live in Thailand). Sorry if the amounts are a little loose, I cook by "feel.".

Pad Thai.

3-4 oz. cooked shrimp.

1/2 cup egg beaters.

1 pkg. shiritaki noodles (8 oz.).

1/2 cup mung bean sprouts.

1 tsp minced garlic ( I use the already-chopped stuff that comes in a jar)..

1 tbsp. Thai fish sauce.

1 tbsp. ketchup (yup, believe it or not).

2-4 packets Splenda, to taste.

Toppings:.

1 tbsp. chopped peanuts.

1 tbsp. powdered dried shrimp (I found it at my local Safeway in the Mexican spices section).

Lime juice or TrueLime sprinkles.

Chopped cilantro.

Chopped scallions.

Cayenne pepper.

Rinse the shiritaki nooodle and boil for 1-2 minutes to get out the weird smell. Set aside..

Spray a nonstick pan with Pam and heat medium-high. If you're not worried about the extra calories, you could add 1 tbsp. canola oil ( I didn't use any oil)..

Add the shrimp and minced garlic and cook until the shrimp turn a toasty brown color..

Add fish sauce, Splenda, ketchup, and stir..

Add Egg Beaters and shiritaki noodles, stir-fry until the egg is cooked. Spray on a little more Pam if it's getting dry..

Add mung bean sprouts and stir-fry until the sprouts are soft..

Put on a serving dish, sprinkle shrimp powder, peanuts, cayenne, cilantro and scallions on top. Sprinkle with lime juice and more fish sauce if desired..

If you're worried about the carbs, leave the ketchup out, although 1 tbsp. ketchup is okay as a condiment. For American tastes, you might want to use more Splenda..

This makes one HUGE serving that should count roughly as one lean and green, plus one snack for the peanuts and 2 condiments for the ketchup and the fish sauce..

Get Walden Farms fettuccini sauce. I haven't used it myself yet, but so far I've been satisfied with all their products, so I'm sure it's good. I also baked macaroni & cheese the other night, ate it right up all my lean & green right there. It was delish! I've made the pasta & meatballs, baked lasanga (same idea, layering sauce, noodles, ff ricotta & mozz cheese & meatballs (I use veggieballs, btw, not actual meatballs) & chicken stir-fry w/ a bit of broccoli, all outa the noodles! Have fun with em!..

I just ate the Pad Thai again tonight and made it with extra firm light tofu and it was great. If you don't have/like the fish sauce, use light soy. Enjoy!!..

I get mine at the local health food store called Mrs. Greens. Trader Joes carries them too. They're House Food American Corp brand. You can possibly check their site to find locations that would sell the noodles. http://www.house-foods.com/..

How do the noodles work? Instead of meat or greens?.

The Shirataki noodles counts as part of your green. If you look at the Lean & Green under Add Food, under (I think) cooked vegetables, they are there...

No Shiritake noodles count as your green. 1.5 cups, in fact. You are advised not to eat them every day because they don't really have any nutrients, but they are "noodles" made out of yam, and they are carb/gluten free. I ordered some, but need to go back on the diet to try them..
