I'm a creature of habit, and every Sunday morning I make a Chocolate Oatmeal Muffin, it's my treat and I look forward to it, but I've run out of oatmeal.

AGHHH I need a no fail Chocolate cake recipe for the morning, any shake cake that I've tried has ended up like a hockey puck, I haven't managed to get one that has a cake like texture at all...............HELP..

Here you go, a few muffin ideas, it's the one thing that I can cook consistently well.

By playing around I have found my to die for recipe, only to be eaten once a week, Sunday breakfast if I've had a good weigh in..

1 pack oatmeal.

1 tbs ground flax seed.

1/2 tsp baking powder.

1 tsp dark cocoa powder.

A splash of egg whites.

Enough water to make a dropping consistency batter..

1 tbs peanut butter.

Mix the oatmeal and flax, then sieve the cocoa and baking powder, add to dry mix, mix well. Add the wet ingredients and mix well..

Put half the mix in a PAM sprayed bowl, add dollop of peanut butter, cover with rest of muffin mix..

Nuke in micro for 2 mins, turn out onto a plate, nuke 30 seconds more..

Take the phone off of the hook, send the family out on a long walk, lock the gates to your yard..

Sit and enjoy for as long as humanely possible..

Next suggestion, I made some great muffins last week, mixed 1 pack of eggs, 1 choc shake, 1 oatmeal, 1tbs of baking powder. Mix well, add enough water to make a soft dropping mix. Makes 3 really tasty muffins..

Muffins.

Oh, dilligaf, I'm so sorry you won't get your muffin. It sounds wonderful. Thanks for sharing the recipe. If I could, I'd gladly wish you a packet of your choice of oatmeal in exchange for you wishing me a bar or pretzels or puffs LOL! Why can't we figure out just the right amount to order for each type of meal so we won't run out before our next order???.

So maybe you've seen this link. Don't know if it might have a shake cake recipe you haven't tried yet. I've only done shake cake once, and I don't even remember the recipe I used, so I can't vouch for any of these..

Here's one recipe from the list, a muffin recipe using shake rather than oatmeal:.

Muffins.

One packet Dutch Chocolate shake.

1/4 - 1/3 water (I have discovered that the packets do not always have the same amount of powder, so the water can vary. Start with 1/4 cup, add more as needed).

1/2 tsp cinamon.

1 tsp baking powder.

Pinch of salt.

1 tsp vanilla extract.

1/2 tsp walnut extract.

Mix together thoroughly. I sprayed my mini muffin pan with Mazola butter flavor non-stick spray. Bake at 375 for 20-25 minutes. Ovens vary, so cooking times will as well. This made 6 mini muffins...

Shake cake.

1 pack shake mix - chocolate is my fave but any one works.

2 tablespoons egg beaters.

1/2 teaspoon non aluminum baking powder.

2 - 3 tablespoons water.

In place of the water, you can use DaVinci sugar-free syrup.

Mix everything together, but put the baking powder in last, so it doesn't over work..

Put everything in a microwave bowl that has been sprayed with pam. I use little custard cups,except for the antioxidant shakes - they need a bigger bowl..

Microwave on high for 1 1/2 minutes, check and see if it's done..

I have to bake the shake cakes in my micro no more than 1 min 20 seconds, if I bake it longer it is like a hockey puck. You have to experiment with your micro, they are not all alike. I use 1 shake, 2 T water, 2 T egg beaters, 1/2 teas non alum baking powder..

Spray a custard cup (10 oz size works best for me) I like the choc shake the best for this...

Thanks for all the suggestions, I got pm'd this one and got it to work.

Awesome Chocolate Cake*****.

1 pkt dark chocolate shake.

Tsp baking powder.

1 tsp/pkt Splenda [optional].

1 tsp ground flax [optional].

2 tbsp Egg Beaters.

1 tbsp I Can't Believe It's Not Butter spread.

Mix all ingredients in a small microwave safe bowl. Scrape the sides..

Microwave for 1 minute. Invert onto saucer. Microwave 30 seconds.

It was good, but I must say I prefer my muffins, I've ordered extra oatmeal in my next shipment..
