Medifast recipe for Eggplant "lasagne"?

I made this twice so far and it's delicious. My husband loves it..

3 Eggplants (approx.).

1/2 onion, chopped.

2 cloves garlic, chopped.

Pacakge of ground beef, turkey or chicken.

1 can (14 oz) diced tomatos (I use Delmonte diced tomatos with mild green chilies).

1 tablespoon grated parmesean cheese.

Shredded mozzerella.

First I slice the eggplant and put on a baking sheet sprayed with Pam. Spritz with olive oil, sprinkle with salt and pepper. Roast in the oven until tender..

Cook the onions in a skillet sprayed with Pam. When tender add the garlic. Cook for about a minute. Add the ground beef, turkey or chicken and break up into pieces. When it is cooked. add the can of tomatos and parm.



To assemble, I use individual corningware serving dishes. Measure out 1 cup eggplant. Measure out your meat & mozzerella cheese. I account for the tomatoes by 1/2 cup. Put a layer of eggplant on the bottom of the dish, then a layer of meat, then a layer of mozzerella. Repeat with the remaining eggplant, meat and end with mozzerella on top.



YUM-O!! Enjoy!!.

Sorry to be dense but, what amouts of each are you using for your individual lasagne and how are you logging it? This is something I want to try this weekend...

Lynda...I know the measurements get confusing sometimes and it's hard when you're mixing foods together. Ok....here's what I measure:.

3.5 ounces of cooked eggplant = 1 cup.

5 ounces ground beef, turkey or chicken.

1 ounce grated mozzerella cheese.

1/2 cup tomato.

I measure 5 ounces of the meat because the tomato is already mixed in there so I'm kind of eyeballing the fact that there is about 1/2 cup of tomato and that would add an extra ounce to the lean part of the meal. Does that make sense?? I hope this helps..
