I adapted this from a South Beach Diet recipe board I use to go on. If you adjust your protein portion this could be great for turkey or beef burgers. There's 1/4 C per six buns so that's less than a Tblsp ricotta and parm and less than one egg per serving. They really do come out pretty nicely if you beat the eggs and fold in the yolks correctly. I made them last night and had them with a 4oz ground turkey breast burger. Yum!!.

4 eggs room temp.

1/4 cup low fat ricotta cheese.

1/4 teaspoon cream of tartar.

1/4 C shredded parmesan cheese.

Shake or two of salt.

A shake or two of garlic powder.

Preheat oven to 300. Seperate eggs. Beat egg whites until stiff peaks form. Add cream of.

Tartar and continue to beat until peaks are really stiff. Mix yolks, salt, garlic powder and cheese together. Carefully fold yolk mixture into egg whites a little at a time..

Make six bun shaped piles on a Pam sprayed cookie sheet. I smooth them out to be more bun shaped. Bake for 35-40 min.

I don't see any illegal ingredients but if these are stretching the Medifast plan too much then will someone let me know? If not, I hope you all enjoy!!..

Ricotta cheese is not recommended on the program. It is a high in fat (even if it is part-skim), high in carbs, and calories...

Would these work if we substituted dry (liquid squeezed out or otherwise processed) cottage cheese (which is Medifast legal as lean?)?.

Enquiring minds want to know!.

I haven't tried it with cottage cheese but it might work. I thought ricotta was OK because it's used in a recipe on the vegetarian board. Speaking of vegetarian, I wonder if silken tofu would work since ricotta is a no no!..

If you're only using 1/4C of Ricotta, that's not bad at all. Not sure why Nutrisystem would recommend against it as you're adding a whole 3 carbs and 5g of fat (fat being one the numbers that, sticking to the Nutrisystem recommendations, I fall short of most days)...
