I'm making OP tomato and (lean) meat spaghetti sauce (my guys are having pasta) I may either cook spaghetti squash for me or just eat 5 oz. of the yummy saucy meat with a salad on the side!.
YUM! Unfortunately pasta is/was (!) one of my very favorite foods in the whole world I like that I can still get the taste of it without the carbs!.

I had FluffyMoGirl's Parmesan Chicken and roasted yellow squash and zucchini. Boy was it good! Thank goodness I have leftovers tomorrow! Yum!..
Glad you liked it Sandy. I am having a simple salad with tomatoes, eggs, Parmesan puffs and a small bowl of Cottage Cheese. Thursday is school night for the hubby so we usually have something simple so he can take it to work for lunch!..
Crock pot roast beef with a big ol salad. Did the trick. I'm no longer hungry...

I get the normal kind cuz I like to eat the mashed cauliflower with them. I use the Light kind...any flavor and you get to use 4 wedges...cuz you can have two healthy fats..that whaat I use...and the cauliflower I make like everyone else but here at work I just steam in mic and take a knife and chop it up really finely and add my 3 wedges in and also the last wedge I spread on the boca burgers...
And you can cook them in mic grill oven anyway you wanna!..

Steph- I stir fried chicken strips and, multi colored peppers and mushrooms with a 1/2 tsp of fajita seaoning, served with lite sour cream and lettuce leaves (for wraps) very good..
You have the recipes for thaat?.

My chili... and if you see some discrepancies please pick it apart!.
I brown 1# of the leanest ground beef (usually 96/4).
Diced 1/4 yellow onion... works out to be about 4T.
1 diced pepper (color of your choice).
1 can of crushed fire roasted tomatoes and 1/2 can of water.
Spices... depending on how hot you like it.... I use a mix of chili powder/cumin/cayenne..
1/2 of this mixure is 1 lean and 2greens.... that's where I add in the green beans. You can completely make this with ground turkey... I usually make a double batch and break it into individual servings that I keep in the fridge. Also, drain the meat before you add the tomatoes... there isn't much fat... but I still do it or blot with paper towels.....
12 oz pre-cooked chicken breast, 1 cup diced peppers,1 cup scallions, 1 cup diced tomatoes, 1 tbs olive oil (for saute), 2 tsp taco or fajita seasoning, 1/2 water. Saute all but the seasoning and the water. Once the peppers are the consistency you want, add the seasoning and water. Simmer 15 minutes. Makes 2 meals...

(I could drink that sauce right out of the bottle). And since I only had a little bit of salmon leftover for tonight I completed my lean with some delicious cottage cheese...
