Okay I forgot to post this because of all the laughs and giggles at the new Medifast Dictionary thread. Whew..

BETTINAV'S Chicken-Olive-Roasted Red Pepper Casserole.

Here it goes. I don't measure perfectly so please use your discretion.....

I wanted to make something easy no real assembly time because of this crappy long work week. Soooooo I took things out of the fridge and threw them together. I just heard that we can have OLIVES (log as snack).

Chicken Cutlets (I use Trader Joe's Pollo Asada which is already marinated if you don't have this then rub some Southwestern seasonings on the chicken).

Bottled Roasted Red Peppers they are just in vinegar and some spices, no oil.

Jalapeno Stuffed Olives Cut in half so it looks like more. I think we are allowed 5 per day?.

Low Fat Mexican Cheese blend.

Spray a casserole dish with Pam. Place the seasoned chicken cutlets on the bottom. Layer some Roasted Peppers over the top. Sprinkle the halved Olives around and then sprinkle cheese over the top. Bake for 20-25 minutes at 350 and then place under broiler until cheese is bubbly.

So easy and yummie. The Olive Juice kind of gets in to the juices and adds great flavor. Enjoy!.

Sure beats the 3/4 cup of low-fat shredded cheese I just ate for dinner (obviously, someone needs to go to the grocery store)... Will try it soon. I love southwestern flavoring...

LOVE Trader Joes!!!! I have 1 on my way home from work and two more within 10 miles driving distance. Why? I've never tried the pollo asada... I put it on my list...

Where do you hear about olives and new products in Dec. and the like?? Is there a tip line?..

Olives have been in the Ask the Nutritionist posts over the last few days I think. Maybe if you look under search you can find it. And I emailed Medifast Support and requested a product for them to make, as well as asked if they had anything new coming. They wrote back to me about the December product. No tip line that I know of...

Okay my mistake according to the post under nutrition, we get 5 medium olives as FREE FOOD. So you don't have to log or use them as your snack. Nice...
