After 8 weeks with no cheats,( and I've lost 30 pounds!) I've really started to try to "branch out" and modify my normal comfort foods so I won't be tempted by the "food out there....".

Here's a Chicken Tortilla-les Soup that I worked up last week. Nutrition Support said it looked okay for a L&G meal, so I'm a happy woman... and so is my husband!.

This makes TWO servings!!.

Chicken Tortilla-less Soup.

4TBSP. Chopped Green Chilies (Old El Paso ).

3 slices onion, chopped.

1 tsp. garlic (minced).

12 oz. cooked chicken breast (diced).

Cup zucchini, chopped in little cubes.

2 cups low salt, low fat chicken broth.

1 cup canned low salt diced tomatoes (watch nutritional count and aim for no more than 8 carbs for the cup).

Tsp. cumin.

Tsp. black pepper.

Spray a pan with PAM and saut the onion, green chilies, and garlic. Add the 2 cups of chicken broth, 1 cup water, and remaining ingredients. Simmer for 45 minutes to 3 hours whatever time frame you operate in! Add water as needed.

When ready to serve, if you can afford the calories and you have limited your chicken to a sic ounce serving, sprinkle 1 oz. of shredded low-fat cheddar cheese over the top. Makes 2 medifast servings..

This totals 268 calories and 11 carbs.

I DO whimper a little when I put the zucchini in and leave the avacado out... but I've decided that avacados will still be here when I finish the program!..

And done!.

That was...awesome. It made a ton (2 servings? felt like 6! ) and was just simply delicious..

I sauteed the chicken up with some cumin, oregano, salt, pepper, and chili powder to start, and also used diced tomatoes with chiles in it (in addition to the diced chiles, made it extra spicy and tasty) but otherwise, followed the recipe exactly. I can't wait to have the other half...

I'm so glad you enjoyed it! It's been a staple of ours during the winter, and I'm glad I'll be able to continue to have something close!! My next project is to "Medifastize" a cheese soup with veggies in it... or a nacho cheese soup.... or something like that.....

Thanks so much for the recipe. I was dreaming of tortilla soup last night. Can you come up with something to do with the brocolli soup from MF? I'm afraid of it! Congrats on your 30 pound loss. I've been on for 8 weeks and am down 23 pounds with 27 to go. I haven't cheated, but finally caught on that diet coke isn't water OOPS You sound like a terrific cook. I'm having this tomorrow and I bet hubby doesn't even notice it's a Medifast approved meal!..

I'm so glad that this may work for you! I didn't buy any of the broccoli soup I'm not a broccoli fan but I'm thinking that you might be able to use it as a base for the cheese soup that I'm working on. You could add additional broccoli as part of the green, while I'm going to be using summer and zucchini squash. Give me a few days to see what I can come up with. My main concern has been getting it to thicken.. and the Cream of Broccoli Soup may do the trick!!..

Thank you so much for your soup recipe. I tried it last night and it was fabulous.

I cut the recipe in half mainly because I did not have the zucchini. I used cabbage (ugh, I can hear everyone saying) but it was very good. I think a variety of veggies would work in place of the zucchini..

The half recipe makes a HUGE bowl. I was quite satisfied all evening. Usually about a half hour after my L & G at dinner I am hungry again. But not with this soup.

Thanks for great recipe and idea. I got the urge after reading this AND just happened to have made some Trader Joes chicken asado (this is soooooo good) last night and had lots left. Made the recipe but swapped the zucchini for bell peppers (don't love zucchini) and added some cilantro (love it) and some packaged cheesy taco flavor (didn't want to use the lean and add shredded cheese). Yummie...
