Medifast recipe for CAULIFLOWER "Potato" PANCAKES?

Be sure to figure out what you ate for L&G accounting purposes..

1 head of cauliflower, washed.

4 eggs (be sure to deduct).

Optional: chopped onions, salt and pepper to taste.

In a food processor, puree cauliflower, add eggs, and blend thoroughly. Should be light colored and fluffy in texture. Spoon on hot oiled griddle. Brown approximately 4 minutes on each side. Note: make size small, they will be easier to flip..

Serve with a sprinkle of chopped chives, salsa or chopped tomatoes..

Enjoy! Yum!..

I have been meaning to attempt this! I just make the cauliflower puree the other night and it was too too yummy. I must admit I always forget about eggs. But I must try this. Yippee!..

I am still new and am totally confused on the green part of our meal and how it is measured. Can you tell me how much would equal our green part of our meal? Do you measure it before you make it? And if you add onions how do you figure that in? TIA..

Okay I just got home from work too late for me to be creative and I only ate once today 9 am beef stew. I wish I had the energy to do this right. But I am starved so I took this idea, with the eggs, and threw it in a casserole dish. I am so excited to try this again the right way tomorrow (and yeah I could have cauliflower every night of th week.) Thanks again for this. Someone else who tries it report back okay?.

Update I just had this for dinner. In the casserole. It was delish. For all the people who have issues with their cauliflower being "watery" then baking it is a great answer. I also added some FF cheese. With the eggs and cheese and the top all brown.

Pancakes next..

Has anyone tried this recipe with just two eggs (since that's the allowed allottment for one day's worth of the lean portion of a lean and grean meal)? Does it taste/cook the same?..

As far as veggies being watery... Try not adding salt BEFORE you cook them/during the cooking process. Add it for flavor after-you might even find you don't need it-I read somewhere yesterday, that you should not put salt in your veggies like the mashed and pancake cauliflower before/while cooking as it causes the veggie to release it's juices making the batter watery..

Bettina - how do you bake the cauliflower exactly? I've never tried that before. Sounds great with a little cheese!.

Also, we don't eat eggs. Is egg substitute allowed on the program? Probably not, come to think of it. I think it's made from potato starch. We use EnerG Egg Replacement in our baking - PRE MF..

You know, if you're using a protein sub like eggs for binding in the pancakes, maybe mixing in shredded cheese would work, too. That would melt and hold them together and give a little extra crisp. Just an idea!..

Actually I used eggbeaters, but that's real eggs right? And I did add some cheese to bind it together. It was really good and I will make it again. It was so easy. I buy the bags of cauliflower from Trader Joe's that you just pop in the microwave for 3-4 minutes. It's not a whole head of cauliflower, I would say more like half. So I then drained on paper towels and tried to get the water out.

Added minced onions (from jar too tired to chop real ones), ICBINB, ff cheese, garlic powder, salt, pepper and nutmeg. Pulsed a few times (left it rather course) and then put in small pam sprayed casserole dish. Baked at 375 for about 30 minutes and once it was brown on top turned on broiler to get it even more brown and crunchy. Does this help? I am going to make same concoction next but try to make the pancakes...

I'm assuming we do not cook the cauliflower prior? Also, does the full recipe count as the entire day's lean and green portion? How do we count it within our myMF?..

No as far as I know, you do not cook the cauliflower prior to food processor. I have not made it yet. Looked it up and looked good so I posted it..

Counting. I havent figured it out but if someone knows how many cups you get outta a head of Cauliflower that will tell ya how to portion it up...

I made the mashed cauliflower with only an egg white, and kept it thicker. I added onions and green pepper, then kind of chopped up the pancakes after they had browned. To me, it kinda had a "potatoes o'brien" kind of taste. Mucho yummy!..
