Trying to broaden my horizons in the vegetable area. Have never prepared these, what's the tastiest "on plan" way to prepare zucchini/squash? thanks in advance- stephanie..

This past week I have been grating the zucchini and sauteing it with some seasoning, adding about 1/4 cup egg beaters and a little parmesan cheese. It was amazing! Looks alittle like hash browns. I also did the same thing with 2 eggs and counted it as my L&G. It was really satisfying...

I really enjoy the recipe provided here for Zucchini Pasta..

I eat my Spaghetti Squash just like spaghetti: with sauce, parmesan, sauteed mushrooms...

You can also grill them. Just cut them length-wise instead of round so they don't fall through the grill...

Slice thin, spray with olive oil PAM, season to taste with garlic salt, lemon pepper seasoning, Mrs. Dash or whatever you like, then roast on a cookie sheet at 400 degrees until crisp...

I use them sliced thin as the bottom layer of "lasagna". I layer a halp cup in the bottom of a small casserole, top with 1/2 cup LF ricotta mixed with one egg, garlic powder and pepper, add another layer of 1/2 cup squash, pour 1/4 cup of SF tomato sauce over it , top with 1/4 cup LF mozzerella and bake until the squash is tender. You can also add some Morningstar Farms crumble to up the protein. It really satisfies my Italian Food cravings!!..

As thin as you like really... The thicker the slices the more firm the texture. I personally like my squash dead, so I slice as thin as I can... usually a 1-2 on my mandolin...

With a cold, snowy day here in SC yesterday, I made chili with zuccini. I bought a McCormick's Chili seasoning pack and followed the directions on the back, using ground turkey, low sodium diced tomatoes, and onions. Then, instead of beans (too many carbs!!!) I substituted diced zuccini. It is hardy and wonderful!!!..

Hi. I make zucchini and yellow squash a couple different ways. The one I can get everyone to eat is:.

2-3 yellow squash or Zucchini cubed or julianne.

2 cloves of garlic chopped fine.

1/4 cup low fat chicken stock.

1/2 tbs olive oil.

Salt and pepper.

Heat a non-stick pan over med-high heat. Once hot add olive oil and garlic, saute fo jsut a minute. Add veggies to the pan and saute two minutes. Add chicken stock and cover. Cook until the veggies are the tenderness you like. Some people prefer aldente others mushy either way this dish only takes a few minutes to cook, Finish by adding salt and pepper to taste..

My absolute favorite (and I have said this mnay a time *grin*) is to julienne the zucchini, saute it a bit with a couple of tablespoons of chicken broth and add to laughing cow wedges. It makes a great faux alfredo sauce... and it's great on it's own or with shrimp...

I too love to shredd my zucchini. Place on a paper towel and let sit for awhile so they give up any moisture. Spray your pan with Pam and saute. You can add sliced mushrooms, or grape tomatoes or ? One night I cooked the shredded zucc. briefly, then added 4 kalamata olives, sliced and some grape tom. then added some chick that I had cooked and cubed.

I added some cheese and stirred until melted. Comfort Food. Season to taste. Cinnamon on chicken gives it that 'hmmmm" flavor...

This sounds like such a great idea, I will try it this week-end. I love chili and the Medifast chili just isn't doing it for me. Thanks for the idea, I would have never thought of this...

I like my zucchini either grilled or oven roasted. Chunk up zucchini, mushrooms, squash, asparagus, peppers, or whatever veggies you want drizzle w/olive oil and season to taste. Cook them in a 400 degree oven for 20 - 30 minutes. Check them about 1/2 way through and give them a good stir. Yummy!!..

I didn't grow up eating those vegetables so I really don't have any taste for them, but I've made them recently in round slices, EVOO, kosher salt or your choice of spice, and grilled them on the gas grill on a little skewer I bought at WM. They were delicious...
