No kidding, they would wear a cape if they could. They are crispy, buttery and delicious. I can't get enough of them.

This took a lot of trial and error but I found the magic mixture.

1 maple and bs oatmeal.

1 TBS PB2.

1/8 tsp baking soda.

1/8 tsp baking powder.

2 splendas (I use the hazlenut one).

Dash of cinnamon.

Dash of salt (needs it, believe me).

1/2 tsp butter extract.

Enough water to make it into a firm dough (I just run the tap on low and add until the right consistency).

Butter pam (a generous spray) a cookie sheet. Flatten them out the best you can with pam sprayed fingertips. Bake for 10 minutes at 350, flip for 5 minutes. Turn oven off and let them crisp up for up to 5 more minutes.

Enjoy!!..

I usually make 4 cookies with it, but you could even have 1 or 2 big cookies if you want. The flatter the better if you like them crispy.

PB2 is the powdered peanut butter...

If we don't have PB2 can we use peanut butter instead?..

I have to tell you...YOUR recipe got me off to an awesome start!! The day I started (Monday) I read through and found this recipe for cookies...went down to the store and got what I needed...I LOVE THE COOKIES! I couldn't believe how full I felt from the four small ones I made from one packet! So THANK YOU!.

PS. I couldn't figure out where to find the 'hazelnut Splenda' you referred to and happened to wander into the coffee aisle...there it was! (not with regular Splenda)..I also had no idea where to find butter extract so I just used a little 'I Can't Believe it's Not Butter' For those people who don't have the PB2, a LITTLE BIT of peanut butter and I counted that as my snack...

I'm glad you like them! I actually have tweaked them even more. I know add Peanut Butter extract (at watkins.com) and 3 splendas. TO DIE FOR! I can't get enough of them!!! I also bake them for 16 minutes and don't flip them (for some reason they are crispier that way)...

This is a great recipe but I need one that makes a bunch of them at once and need to know how much water to put into the batter? I am not one of those people who can just guess - that's enough water - etc. I would like to bake at least a dozen or more at a time. I know some of you cooks can figure this out. I like the idea of the pb extract. I must find some. I love crispy cookies! Love ya all...

Great recipe! I had to use Apple Cinnamon oatmeal and they were really good. Think I'll make some more for breakfast MaryJo, I'll measure the water this time...

Update: I used exactly 1/4 cup of water for the recipe above.

I also added an extra T of PB2 , so you may want to use a tiny bit less water...
