My sister gave me a whole box of Medifast eggs that she didn't like, and I'm in a dorm so I can't use a stove to make legit scrambled eggs - I just get egg whites in the dining hall if I want that. I was wondering if anyone had any good recipes with Medifast eggs in them?..

I'd love to answer, but I'm not sure what to tell you. I did see a muffin recipe somewhere on here that had the eggs included, but that won't help you in the dorm Do you have a microwave in your room?..

I eat Medifast eggs everyday. I make them 3 ways. All in the micro, I'm assuming you or someone else in the dorm has a micro in their room Shake up the egg. I always put water in the shaker first, then the Medifast mixif I don't I always seem to have mix stuck to the bottom. Anyway, shake, shake, shake, let it sit for a little, shake, shake , shake. You could do it the night before and put in in the fridge, but I don't.

Pour egg mix in. Micro for 35 seconds, mix, 30 seconds more, mix. Keep microwaving for 20-30 seconds until the eggs are cooked. The key to microwaving them is to stop and mix a few times, that way they don't explode or dry out. It actually doesn't take any longer to do than on the stove, and easier cleanup-just eat from the bowl!.

So, my first way is just like I described-basic scrambled eggs, I put salt, pepper and a little ketchup on them. 2nd way is I add little pieces of LC cheese to the bowl with the egg. It melts and is yummy. The other way is I mix in 1 tbsp salsa and 2 tbsp low fat shredded cheddar cheese before cooking. I find it tastes better this way than putting the stuff on top of the eggs. For me, salt and pepper always on them, if not they are a little blah, like egg beaters..

You could also add cooked peppers, tomatoes, broccoli, asparagus, etc to the mix, making sure you subtract it from your green..

I don't know if you were looking for recipes using the eggs in them, or just egg recipes. Access to a stove would probably be needed for most recipes I think. I have Medifast eggs everyday for lunch and they are good and filling..

I feel bad that you haven't gotten many responses, but I'm with "Knittinma" - I don't have any ideas for you. Those dry scrambled eggs look less than appetizing for me. I am interested to see what other people do with them, though. Maybe I should try them? I hope you get helpful responses!..

I have a microwave and glass tupperware- I have been successful with a lot of recipes. So far I've made: Soup chips, bread, shake cakes and oatmeal/hot cocoa cookies in the micro so i'm not entirely limited due to lack of a stove.

I was looking for recipes with eggs in them, not recipes for eggs b/c I only like the taste of egg whites anyway.....

All my recipes are oven baked I don't personally mind the eggs in the micro with a little salsa. That works great..

Try this in the micro and see if it works.


1 Medifast egg packet.

1 Medifast vanilla shake packet.

1/2 tsp baking powder.

Little vanilla flavoring.

Water to consistency of runny pancake batter (about 1/2 cup or so).

Cook in pan with pam spray.

Makes 2 Medifast meals, serve with little butter spray or else SF jelly. * (maybe try fat free cream cheese)..

I don't know if this one would work in the micro, but worth a try:.

SIMPLE 'SHAKE AND BAKE' CUSTARD...Makes 2 Medifast Meals.

In shaker jar combine:.

8 ounces water.

1 packet Medifast Eggs.

1 packet Medifast Vanilla Shake (55, 70 or Diabetic).

4 packets Splenda.


Pour mixture into 2 custard cups sprayed with Butter Flavor Cooking Spray.

Sprinkle tops with nutmeg (optional).

Put custard cups on cooking tray.

Bake at 350 degrees 20 minutes (if using a toaster oven 425 degrees).

Eat one warm and the other cold (will save in refrigerator).

I found it on another thread and people really seemed to like it - but suggested you mis the nutmeg in rather than just sprinkle on top. I'm trying to find something to do with my eggs, too.....

I mixed it with COT soup and made an awesome bread, then pizza by putting salsa and 75% reduced fat cheese on top. It was soooo yummy!!!.

Do you think you could mix a shake with the eggs to make cake or would it taste wierd or too eggy?..
